Every dish carries a history: the crop that would grow in that soil and no other, the trade route or the empire or the wave of migrants that brought a new ingredient, the year a government or a chef or a bakery fixed the recipe in place, the religious calendar that made a fish dish a national habit. Learn the food and you have learned a compressed version of the place.
The quizzes here range across the whole table. National and regional dishes, from paella to pavlova to peri-peri chicken. Street food eaten standing up at a stall. The spices and herbs that were once worth more than gold and the sea routes that were opened to reach them. Because so much of the world's best food is shared, borrowed or fought over, the answers name the disputes rather than smoothing them away. Every claim is checked against reliable sources, and the wording is kept plain.
